Mamie Clafoutis reinvents the bakery experience

Leav case study, reproduced as published by Fidget's operating team (the same team behind Leav); the numbers below are Leav-era, not Fidget benchmarks.

The challenge

Mamie Clafoutis set out to remove the physical counter as the only way to buy from its bakeries, without losing the service its regulars expected. As published, the chain needed to eliminate wait times and counter bottlenecks, offer self-service without displacing personalized service, and open store access securely outside staffed hours, all on a cost-effective, mobile-first system.

The solution

Leav's platform combined mobile POS (mPOS), Scan & Go self-checkout, and LiveCarts, plus the backend tools for unmanned operation and 24-hour access. Staff could take payment from anywhere in the store instead of a fixed counter; shoppers could scan and pay with their own phones; and carts could be shared seamlessly between staff and customers.

  • Mobile POS (mPOS): staff complete transactions from anywhere in the store
  • Scan & Go self-checkout: shoppers scan and pay with their own phones
  • LiveCarts: cart sharing between staff and customers in the hybrid model
  • 24/7 store access: the groundwork for shopping independently outside staffed hours

As published, deployment took approximately two months, covering POS and payment integration, minimal staff training, and testing the setup under high-traffic conditions.

The results

  • Over 10,000 transactions processed in the first 5 weeks after launch
  • An average of 15% of daily carts used Scan & Go, peaking at 25% at launch
  • 89% of customers reported high satisfaction with the new model
  • Average transaction time of about 5 minutes; Scan & Go usage translated to roughly 27 hours of staff time saved per week, or over 1,400 hours annually, per the published case study
Leav's technology enabled us to reinvent the bakery experience by breaking down barriers between our products and customers. It's streamlined our operations while enhancing the overall experience.

That quote is attributed to Joseph Sabatier, co-founder of Mamie Clafoutis, in the original case study. The bakery's hybrid model, staffed by day and self-service by night, is what the published account points to as the template for the chain's next stores.
